Roasted Curry Cauliflower was a perfect side dish to my
Easter Sunday Citrus Roasted Tofu, which also has a hint of curry. (click here for that recipe) Use regular
curry if you must, but don’t shy away from a hot curry.
Basically, cut
cauliflower into large pieces, drizzle with olive oil and sprinkle curry over
all. Massage together with clean hands and bake on a foil lined baking
sheet in a 400 degree oven until soft and toasty. I turned the veg over so it
didn't get too brown on one side.
Finish the dish with a big squeeze of lemon juice and some coarse sea salt.
Cauliflower is SO wonderful roasted - love that you've added the curry :)
